Hello sunshine!
Chickpea is one of my favorite legumes not only because of its flavor, but also because it´s super versatile! Did you know that with chickpea you can make from whipped egg whites, vegan version, to tofu? One of these days I´ll share these recipes with you. 🙂 Until then let me tell you how I make my chickpea salad, a great option for these hot days with the plus of being satiating.
Chickpea Salad
Ingredients:
- 2 1/2 cups of cooked chickpea
- 2 garlic cloves
- 1 small red onion
- 1/4 cup of parsley
- 1 tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp Himalayan pink sal
Instructions:
- Place the chickpeas in a bowl
- Chop the garlic and onion and add them to the chickpeas
- Separately mix the olive oil, paprika and salt and season the salad
- Finally add the chopped parsley
And because summer rhymes with salads, don´t forget to eat plenty of them! 😉 Your body will thank you! 🙂
