Hello sunshine!

I always have a vegetable milk at home, usually almond or coconut milk. I use them not only in my kefir, but also for cooking, of course. 🙂

In the past I shared with you how to make almond milk at home and today it´s time for the coconut milk recipe!

 

Ingredients (for 1 liter):

  • 1 cup of grated coconut
  • 1 liter of mineral water
  • 1 tablespoon of raw honey (in case you want to make kefir)

 

Instructions:

1. Heat the water (but don´t let it boil)

2. Add the coconut to the water and wait 20 minutes

3. After this time, place the mixture in a blender together with the honey, Blend until smooth

5. Strain the milk using a cheese cloth and store it in the fridge

 

Coconut milk lasts 5-6 days in the fridge, more than almond milk which is usually 3 to 4 days. And just one more thing: instead of discarding the leftover coconut meal you can turn it into flour! You just need to bake the coconut meal in the oven, use a food processor to grind it and then place it again in the oven for the “final touch”, a.k.a. to make sure it dried completely.  🙂
