Hello sunshine!
The other day a friend of mine asked me if I had a recipe of energy bars, basically something practical to eat on the go. As a matter of fact I didn´t have at that time, but I love to create! I opened my pantry and I decided to make energy bars with the ingredients I found. It´s a simple, quick and healthy recipe as always. My boyfriend is now a fan and I hope you like them too!
Energy bars (8 units)
Ingredients:
- 2 cups of rolled oats
- 5 tablespoons of shredded coconut
- 1 pack of almonds (150gr.)
- A pinch of vanilla powder
- 3 tablespoons of coconut oil (liquid)
- 8 tablespoons of honey
Instructions:
- Pre-heat the oven to 180º
- Toast the almonds in a pan
- Place the toasted almonds in a food processor and roughly grind them
- Put in a bowl the rolled oats, shredded coconut, almonds, vanilla powder and mix everything
- Add the coconut oil and mix again
- Gradually add the honey until the mixture is easy to shape
- Press the mixture evenly into a rectangular baking dish (previously greased with coconut oil). The mixture should be approximately 1,5 cm high
- Put it in the oven for about 20 minutes
- After this time, or when you notice the mixture is becoming golden, turn off the oven and take the baking dish out
- Wait for it to cool down to cut the bars
This is the basic recipe. You can then add other ingredients such as raisins (I didn´t have them at home at the time) or seeds.
Nurture yourself,
Natacha
