Hello sunshine!

The salad season is coming! And contrary to what many people might still think – maybe even you – a salad can be much more than lettuce leaves. So today I would like to introduce you to a different salad: roasted asparagus salad. You will see how easy it is to make and, above all, tasty! 🙂

 

Roasted Asparagus Salad

Ingredients:

  • 1 bunch of asparagus
  • Leafy greens (e.g., lettuce, arugula, dandelion, spinach)
  • 6 cherry tomatoes
  • 3 garlic cloves
  • Extra virgin olive oil to taste
  • Lemon juice to taste
  • Fleur de sel to taste
  • Oregano to taste

 

Instructions:

  1. Preheat the oven at 200ºC
  2. Cut the bottom end of the asparagus (the part which is tough and fibrous) and season them with salt, olive oil and roughly chopped garlic
  3. Put the asparagus in the oven for 15 minutes or until tender
  4. Lay out the leafy greens on a platter and season them with a pinch of salt and olive oil
  5. Wait for the asparagus to cool down, place them on top of the leafy greens and add a few drops of lemon juice
  6. Finally, garnish the salad with the cherry tomatoes, cut in half, and season them with a pinch of salt, oilve oil and oregano
