Hello sunshine!

The cold weather really calls for a soup, doesn´t it? Well, to tell you the truth I eat soup all year round. For me it´s a must! And today I am going to share with you the recipe for an unlikely soup: nettle soup.  

There are so many plants considered weeds that are so good for our health! I am talking not only about stinging nettle, rich in calcium, magnesium and iron as well as vitamin A and K, but also purslane, a great source of omega-3, and dandelion greens with its high content of vitamin A and K, among so many others. We pass by them without even noticing, but they are there just waiting to be picked!

 

Nettle Soup Recipe

Ingredients:

  • 50 gr. of nettle leaves
  • 2 medium zucchinis (500 gr.)
  • 3 carrots (200 gr.)
  • 1 big onion
  • 2 big cloves of garlic
  • 1 tbsp of coconut oil
  • A drizzle of olive oil
  • 1 tsp of salt
  • Pepper to taste
  • 1 liter of water

 

Instructions:

  1. Peel and chop the onion and garlic and place them in a big pot
  2. Peel the zucchinis and the carrots (if they are not organic), chop them and also place them in the pot
  3. Sauté the vegetables in coconut oil
  4. Pour the water and the nettle leaves
  5. When the water starts to boil turn the heat down and cover the pot
  6. Wait around 25 minutes (or until the onion is tender) and turn off the heat
  7. Purée the soup and add salt, pepper and olive oil
