The other day a friend of mine asked me if I had a recipe of energy bars, basically something practical to eat on the go. As a matter of fact I didn´t have at that time, but I love to create! I opened my pantry and I decided to make energy bars with the ingredients I found. It´s a simple, quick and healthy recipe as always. My boyfriend is now a fan and I hope you like them too!


Energy bars (8 units)


  • 2 cups of rolled oats
  • 5 tablespoons of shredded coconut
  • 1 pack of almonds (150gr.)
  • A pinch of vanilla powder
  • 3 tablespoons of coconut oil (liquid)
  • 8 tablespoons of honey



  1. Pre-heat the oven to 180º
  2. Toast the almonds in a pan
  3. Place the toasted almonds in a food processor and roughly grind them
  4. Put in a bowl the rolled oats, shredded coconut, almonds, vanilla powder and mix everything
  5. Add the coconut oil and mix again
  6. Gradually add the honey until the mixture is easy to shape
  7. Press the mixture evenly into a rectangular baking dish (previously greased with coconut oil). The mixture should be approximately 1,5 cm high
  8. Put it in the oven for about 20 minutes
  9. After this time, or when you notice the mixture is becoming golden, turn off the oven and take the baking dish out
  10. Wait for it to cool down to cut the bars


This is the basic recipe. You can then add other ingredients such as raisins (I didn´t have them at home at the time) or seeds.
