Rosti is a Swiss traditional dish made with potato. It is similar to a pancake, but in my version it´s more like a crepe. Rosti is simple and easy to do. However, you will need a little strength in the arms to grate the potatoes if you want to make lots of them. 😉
Potato Rosti (makes 4)
Ingredients:
- 4 medium potatoes
- 2 medium onions
- Salt to taste
- Black pepper to taste
- Extra virgin olive oil to taste
Instructions:
- Peel and cut the onions into slices
- Place the onions in a frying pan drizzled with a bit of olive oil until they begin to caramelize
- Wash and peel the potatoes
- Grate the potatoes and place them in a bowl
- Add the onions to the grated potatoes, salt and pepper and mix carefully
- Lightly grease a small frying pan with olive oil
- Place about 1/4 of the mixture in the pan and with the aid of a spatula press it to make the rosti thin (this is how I prefer)
- Wait around 5 minutes* or until the rosti is loose and golden brown. Turn the rosti over and do the same on the other side
- Repeat the process to make the other rostis
Arrange the rosti on a plate and place on top your favorite vegetables! 🙂
