Hello sunshine!

Rosti is a Swiss traditional dish made with potato. It is similar to a pancake, but in my version it´s more like a crepe.  Rosti is simple and easy to do. However, you will need a little strength in the arms to grate the potatoes if you want to make lots of them. 😉

Potato Rosti (makes 4)

  • 4 medium potatoes
  • 2 medium onions
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil to taste

  1. Peel and cut the onions into slices
  2. Place the onions in a frying pan drizzled with a bit of olive oil until they begin to caramelize
  3. Wash and peel the potatoes
  4. Grate the potatoes and place them in a bowl
  5. Add the onions to the grated potatoes, salt and pepper and mix carefully
  6. Lightly grease a small frying pan with olive oil
  7. Place about 1/4 of the mixture in the pan and with the aid of a spatula press it to make the rosti thin (this is how I prefer)
  8. Wait around 5 minutes* or until the rosti is loose and golden brown. Turn the rosti over and do the same on the other side
  9. Repeat the process to make the other rostis

Arrange the rosti on a plate and place on top your favorite vegetables! 🙂

Nurture yourself,

*It will take longer if you prefer a thicker rosti.
