Hello sunshine!

The warm weather calls for a cold soup, don´t you think? And because this is the tomato season I thought that it would be a good idea to share my gazpacho recipe with you!

Ingredients (for 2):

  • 1 kg. of tomatoes
  • 1 tablespoon of olive oil
  • 1 garlic clove
  • 7 basil leaves (5 for the mixture and 2 to decorate the top of the gazpacho)
  • Salt to taste



1.Remove skin and seeds from the tomatoes

2.Peel the clove of garlic

3.Place all the ingredients in a blender

4.Blend it until smooth

5.Place the gazpacho in the fridge for one hour at least*

6.Before serving, chop the two basil leaves and place them on top

*If you don´t have time for this, add a couple of ice cubes to the blender.
